The great harvests, grown again.

Nothing is planted until it is wanted.

A lot is a batch of one vintage: crates of Chardonnay, boxes of San Marzano. Reserve part of it at the pre-order price. When seven-tenths is reserved the lot is confirmed and goes into the first free chamber, which begins that year again on day one. If it doesn’t fill by its closing date, it is not planted and nobody owes anything.

One recorded day, lived again every day.

Air (°C). The recorded high, then the night's low.

Light (mol/m²). Lamps run the day's length at the strength of its measured sunlight.

UV (index). Matched to the day's peak, rebuilt from sun angle and cloud.

Rain (mm). Becomes water at the roots, sized to the rain plus evaporation.

Soil (°C). The nutrient solution held at the soil's recorded temperature.

Humidity (%). The day's mean, which sets how hard the leaves breathe.

Readings shown: Le Mesnil-sur-Oger, 1 June 2008.

It arrives the way a grand cru does.

Picked the morning it ships and packed by hand in matte black with a brass edge. Each box carries its place, its year, its lot, and a card printed with the season it lived through — the same day-by-day record that is on its page here.

  • Grapes in a lidded wooden crate, bunches in black tissue
  • Each tomato and strawberry in its own moulded cradle
  • Wasabi on living moss in paulownia wood
  • Overnight, at the temperature each crop wants — never cold for tomatoes or basil

Packaging renders show the design direction; they are not photographs of stock.
